Americans tend to like chicken breast that are without bones and skin. You actually have to pay more for chicken breast if you go to Kentucky Fried Chicken. Quite the opposite, Chinese like chicken thigh, chicken wings, chicken drumsticks with bones and skin. It is also very common to have the whole chicken with both head and tail on a plate.
